Latkes for the one you love

Tonight Colleen and I took a stab at making Dreama’s traditional latkes. Things started out a little rough with our lack of a food processor and what with using the blender, and then with the wateriness of the starch they kind of looked like grainy, uncooked mashed potatoes. Watery, grainy, uncooked mashed potatoes.

It got pretty harrowing there for a while; our mushy latke mix was in danger of being tossed at one point (unbeknownst to Colleen), and it took us seven or so tries to figure out the best way to get the soggy latkes into the hot oil without having them disintegrate on contact. But the way? The best way to get the latkes into the pan? Turned out to be throwing them. From several feet away.

But it worked! With only minimal splatter and minor grease burns, we completed our latke journey and got to enjoy several gloriously warm, crispy latkes with cold applesauce. A most excellent end to our culinary endeavor.

i tried to make latkes once. i used a hand grater, since my food processor doesn’t have a grating disc and the grating drum on my salad shooter (i still kind of laugh to myself when i realize that i own a salad shooter–too weird) doesn’t have small enough… uh, grate-holes. and i still had the problem of them falling apart. although somehow i doubt i’ll ever really be comfortable with your long-distance flinging method, no matter how well it worked out for you. :)
