(More) Latkes for the one you love
Dreama mentioned latkes, so I figured it couldn’t hurt to talk a little about the latkes we made tonight. But first, here is Albus looking disaprovingly on the latke-making shenanigans:
So, back to the latkes. As with last year, we used Dreama’s recipe for traditional latkes. Last year, I actually got a comment on the flickr page for the latkes, noting how different they were than someone else’s… I couldn’t figure out why mine were different, since I’d followed Dreama’s recipe to the letter. Right?
Wrong. There’s apparently a really, really big difference between putting a potato in a blender and putting it in a food processor with a grating attachment. Give me a break - I grew up poor, we didn’t have either of those appliances! Anyhow, we used our spiffy new(ish) processor this year and our latkes looked much more… latke-esque.
Unfortunately, that whole “gourmet latke” thing from Chanukah blog tour last year (whatever happened to that, anyway?) didn’t pan out… I tried adding a bit of honey to the last few latkes and they a) burned fabulously and b) did not taste remotely of honey. Ah well. At least I had the, oh, FOUR MILLION latkes I’d made prior to sustain us. Until I graduate.

…Which is all a rambly way of saying that Dreama’s recipe is simultaneously excellent and abundant, and if you’re only cooking for two you can definitely reduce it, or risk filling your fridge with latkes… though you could certainly do worse, where things to fill your fridge with are concerned.

The criticisms of my students would serve as a good warning to visitors of Seeworthy: she talks too fast, she's too hard on us, she assigns too much work, and you have to be a dyke to get a good grade.

Mmmmm, latkes. We need to make some more tonight!
We use a similar recipe except instead of matzoh meal, we squeeeeeze the bejeebus out of our potatoes, let the resulting liquid settle, pour off the liquid and use the leftover starch. I’ve never tried sweet potato latkes, and I love me a sweet potato. Hmmmm.
We had a whole class full of 3rd graders asking for more, and they are a picky crowd, so we’re sticking with this recipe.

I had a party here Saturday night, and my latkes were floppy instead of crispy. I think matzo meal might be an essential ingredient I was missing … or else I used too much oil. But that just seems impossible
