The victorious return of Chanukah doughnuts

I’ve been feeling pretty blue the past week - no surprise, I’m sure - so I haven’t much been in the spirit of the holiday. My blues seemed to break a little last night, at least, and today C and I decided to be a little more festive. Thus, Chanukah doughnuts 2.0 were born:

Rising

We used Dreama’s recipe, with some slight tweaks here and there - namely letting the dough rise a little more than an hour, and using apple filling and chocolate frosting instead of Dreama’s suggested frosting (because, tragically, my teeth just couldn’t handle that much sugar, even though it sounds delightful).

For the filling, I did the same thing as last year, just mixing up the number and type of apples. I think I went with four McIntosh apples last year, and this year I thought I’d like it a bit tarter, so I added a large Granny Smith. C peeled the apples and I cored them, and then filled them with a sweet butter mixture of 1 stick butter, 1 1/2 tsp cinnamon, 2tbsp sugar, 1tbsp honey and a pinch of nutmeg. They baked for 30 minutes at 375 degrees… unfortunately, I didn’t take into account the different textures of the apples, so mashing the Granny Smiths was a bit of a chore. For C, of course.

Fortunately, the larger apple chunks tasted just as nice in the finished products. Voila!

    The sugar glaze is pretty intense. But wow do these look good. I have had only half of a potato pancake and two donut holes this Chanukah. Darn my finicky liver.

    Oh, lawdamercy, those look good!

    We totally cheat and use pillsbury buttermilk biscut dough, roll it out and make donut holes OR donuts, fry on the stove and sprinkle with sugar. (Bad Jews, my family doesn’t like true sufganiyot.)

    Another thing we need to make tonight… soooo hungry….

    Dude, javamama, when I was a kid and I just felt like being “creative” I used to take those biscuits, poke little holes in them, cook them and frost them with cake frosting. Like, pink cake frosting. So both you and Juliafaye are at *least* better off than that!
